Description

Tender strips of beef cook with colorful bell peppers, onion, soy sauce, ginger, and beef broth in this easy Crock Pot Pepper Steak. A cornstarch slurry creates a glossy savory sauce that tastes delicious over hot white rice.


Ingredients

  • pounds round steak, cut into thin strips
  • 1 green bell pepper, thickly sliced
  • 1 red bell pepper, thickly sliced
  • ½ medium onion, thickly sliced
  • 1½ cups beef broth
  • ¼ cup soy sauce
  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 tablespoon brown sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Cooked white rice, for serving

Instructions

  1. Place the thinly sliced round steak, green bell pepper, red bell pepper, and onion in a 5- to 6-quart slow cooker.
  2. Sprinkle the ground ginger, garlic powder, and black pepper evenly over the beef and vegetables.
  3. Pour in the soy sauce, add the brown sugar, and pour the beef broth over everything.
  4. Stir gently to combine the ingredients and dissolve the seasonings.
  5. Cover and cook on low for 5 to 6 hours or on high for 2½ to 3 hours, until the steak is cooked through and tender.
  6. About 30 minutes before serving, whisk the cornstarch and cold water together in a small bowl until smooth.
  7. Stir the cornstarch slurry into the slow cooker.
  8. Cover and cook on high for 30 to 60 minutes, until the sauce becomes glossy and thickened.
  9. Taste the sauce and adjust the seasoning when needed.
  10. Serve the pepper steak and sauce over freshly cooked white rice.

Notes

  1. For firmer bell peppers, do not add them at the beginning. Add them during the final hour when cooking on low or during the final 30 minutes when cooking on high.
  2. Slice the beef thinly against the grain for the most tender texture.
  3. Brown the beef briefly in a hot skillet before slow cooking when you prefer deeper roasted flavor.
  4. Refrigerate leftovers in an airtight container for up to 4 days.
  5. Freeze the cooled beef and sauce for up to 3 months.
