Description

Crockpot Cheese Tortellini and Sausage – Comforting & Creamy


Ingredients

Scale

1 lb Italian sausage (mild or spicy)

1 (19 oz) package frozen cheese tortellini

4 cups fresh spinach, chopped

1 (28 oz) can diced tomatoes (undrained)

1 (8 oz) block cream cheese, cubed

4 cups chicken broth

1 teaspoon minced garlic

1 teaspoon Italian seasoning

Salt and pepper to taste


Instructions

1. In a skillet over medium heat, cook the Italian sausage until browned and fully cooked. Drain any excess fat and set aside.

2. In your crockpot, combine the browned sausage, diced tomatoes with juice, minced garlic, Italian seasoning, and chicken broth. Stir to blend.

3. Scatter the cubed cream cheese over the mixture. Cover and cook on low for 4–5 hours or high for 2–3 hours until the cream cheese melts.

4. During the last 30 minutes, add the frozen cheese tortellini and fresh spinach. Stir well so everything blends.

5. Taste and season with salt and pepper.

6. Serve warm in bowls and enjoy.

Notes

Use spicy sausage for extra heat.

This dish freezes well.

Add Parmesan on top for more flavor.
