Description

This Crockpot Chicken Gnocchi Soup is creamy, comforting, and perfect for busy weeknights or chilly evenings. With tender shredded chicken, pillowy gnocchi, and fresh spinach simmered in a rich, garlicky broth, this slow cooker soup is a cozy one-pot meal that practically makes itself.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 2 cups gnocchi

  • 1 cup chopped spinach

  • 1 onion, diced

  • 2 garlic cloves, minced

  • Salt and pepper, to taste

Instructions

  • In a Crockpot, combine chicken breasts, chicken broth, onion, garlic, salt, and pepper.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender.

  • Remove the chicken, shred it with two forks, and return it to the pot.

  • Stir in the gnocchi, spinach, and heavy cream.

  • Cover and cook for another 20–30 minutes until the gnocchi is tender.

  • Serve hot, garnished with freshly ground black pepper if desired.

Notes

Avoid overcooking gnocchi—check at the 20-minute mark.

Frozen spinach can be used—just thaw and squeeze out excess moisture.

Add Italian seasoning or grated Parmesan for added depth.

For faster prep, substitute rotisserie chicken and reduce the cook time.
