Description

Crockpot Chicken Parmesan Soup combines tender shredded chicken, tomatoes, rotini pasta, Parmesan, cream, mozzarella, and buttery toasted breadcrumbs in a comforting slow-cooker dinner.


Ingredients

  • 3 boneless, skinless chicken breasts
  • 1 tablespoon minced garlic
  • 1 can crushed tomatoes, 28 ounces
  • 1 can tomato sauce, 15 ounces
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons Italian seasoning
  • 4 cups chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 cup heavy whipping cream
  • 8 ounces uncooked rotini pasta
  • 1/2 cup breadcrumbs
  • 1 tablespoon butter
  • 1 1/2 cups shredded mozzarella cheese

Instructions

  1. Add the chicken broth, chicken breasts, crushed tomatoes, minced garlic, Italian seasoning, tomato sauce, black pepper, and salt to the crockpot.
  2. Cover and cook for 3 to 4 hours on high or 6 to 8 hours on low.
  3. Transfer the cooked chicken to a plate and shred it with two forks.
  4. Return the shredded chicken to the crockpot.
  5. Stir in the heavy whipping cream, rotini pasta, and grated Parmesan cheese.
  6. Cover and cook for 15 minutes on high or about 30 minutes on low, checking the pasta near the end.
  7. Melt the butter in a small skillet over medium heat.
  8. Add the breadcrumbs and stir until they become golden and fragrant.
  9. Ladle the soup into bowls and top each serving with shredded mozzarella and toasted breadcrumbs.
  10. Let the mozzarella soften briefly, then serve hot.

Notes

  1. Store cooled leftovers in a sealed container in the refrigerator for up to 5 days.
  2. The pasta will absorb broth during storage, so add a splash of chicken broth, milk, or water while reheating.
  3. Store toasted breadcrumbs separately so they remain crisp.
  4. For firmer pasta in leftovers, cook the rotini separately and add it to each serving.
  5. Use low-sodium chicken broth if you prefer greater control over the salt level.
