Description

This **crockpot chipotle pineapple pot roast** recipe brings a smoky, sweet, and savory twist to a classic pot roast. Tender beef slow-cooked with chipotle peppers, pineapple, and savory seasonings makes for the perfect comfort food with a tropical flair.

Ingredients

Scale
  • 3–4 lb beef chuck roast
  • 1 medium pineapple, peeled and cut into chunks
  • 2 chipotle peppers in adobo, minced
  • 2 tbsp adobo sauce (from chipotle can)
  • 1/4 cup soy sauce (or coconut aminos for gluten-free)
  • 1/4 cup apple cider vinegar
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar (optional)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup beef broth (optional for extra moisture)
  • Rice or tortillas for serving

Instructions

  1. Trim excess fat from the beef chuck roast and optionally sear it for extra flavor.
  2. In a blender or food processor, combine the chipotle peppers, adobo sauce, soy sauce, apple cider vinegar, tomato paste, brown sugar, smoked paprika, cumin, garlic powder, salt, and pepper. Blend until smooth.
  3. Place the chuck roast in the crockpot, pour the chipotle-pineapple sauce over the meat, and add the pineapple chunks.
  4. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is fork-tender.
  5. Remove the roast from the crockpot, shred the beef, and return it to the sauce.
  6. Serve the shredded beef over rice, in tortillas, or in bowls, topped with avocado salsa, cilantro, or a squeeze of lime.

Notes

  1. If you’re short on time, you can skip searing the beef, though it adds depth of flavor.
  2. For a milder dish, reduce the number of chipotle peppers or omit the adobo sauce.
  3. This recipe is great for meal prep—make extra and use leftovers for tacos or burrito bowls.
