Ingredients

- 2 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 4 hoagie rolls
- 4 slices provolone cheese optional
- Fresh parsley optional
Instructions
- Pat the beef chuck roast dry and rub with olive oil, salt, pepper, garlic powder, and onion powder
- Sear the beef on all sides in a skillet for 3 to 4 minutes per side until browned
- Transfer the beef to the Crockpot
- Mix beef broth, Worcestershire sauce, and soy sauce and pour over the beef
- Cover and cook on low for 8 hours until tender
- Remove beef, rest for 5 minutes, then shred with forks
- Return shredded beef to juices and let soak briefly
- Slice rolls and melt cheese if desired
- Fill rolls with beef and serve with au jus
Notes
- Add sliced onions or bell peppers for extra flavor
- Store leftovers in refrigerator up to 3 days
- Reheat with broth to keep beef moist
