Ingredients
4 boneless, skinless chicken breasts
½ cup chicken broth
½ cup heavy cream
1 cup grated Parmesan cheese
1 tbsp cornstarch
1 tbsp garlic, minced
1 tsp dried oregano
½ tsp dried thyme
¼ tsp red pepper flakes (optional)
½ cup sun-dried tomatoes, chopped
2 tbsp butter
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
Instructions
1. Season the chicken breasts with salt and pepper on both sides and set aside.
2. Whisk chicken broth and cornstarch until smooth, then add heavy cream, Parmesan, garlic, oregano, thyme, and red pepper flakes.
3. Place seasoned chicken in crockpot and pour sauce over the top.
4. Sprinkle chopped sun-dried tomatoes over the chicken.
5. Cook on low for 4 hours or high for 2 hours.
6. Add butter during the last 30 minutes and stir to melt.
7. Garnish with basil or parsley and serve with extra sauce.
Notes
Substitute chicken thighs for darker meat.
Add mushrooms or spinach during last hour.
Increase red pepper flakes for more heat.
