Crockpot pierogi casserole is the ultimate comfort food, combining tender pierogies, smoky kielbasa, and a creamy sauce, all made effortlessly in the crockpot. Perfect for busy weeknights!
Ingredients
Scale
- 1 box (32 oz) frozen pierogies (cheddar or potato)
- 1 lb smoked kielbasa or sausage, sliced into ½-inch pieces
- 8 oz cream cheese (softened)
- 2 cups chicken broth (or vegetable broth for a vegetarian version)
- 1 cup shredded cheddar cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil (optional, for browning)
Instructions
- Spray the crockpot insert with cooking spray. Layer the frozen pierogies at the bottom.
- Add the sliced kielbasa on top of the pierogies.
- In a separate bowl, combine the softened cream cheese with chicken broth, garlic, paprika, and salt and pepper. Pour this mixture evenly over the pierogies and sausage.
- Top with shredded cheddar cheese.
- Cover the crockpot and cook on high for 3 to 4 hours, or on low for 6 hours. Stir halfway through.
- Once cooked, stir gently to combine the layers, then garnish with fresh parsley or green onions if desired. Serve and enjoy!
Notes
- For best results, avoid stirring too much during cooking to prevent the pierogies from breaking apart.
- You can easily customize this recipe by swapping the kielbasa for other proteins like ham or turkey sausage.
- Feel free to add in vegetables like spinach or mushrooms for added flavor.
