Description

A hearty slow cooker shepherd’s pie made with seasoned ground beef, mixed vegetables, creamy mashed potatoes, and melted cheddar cheese for an easy family comfort meal.


Ingredients

  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 12 ounces frozen mixed vegetables
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1 packet French onion soup mix
  • 1 tablespoon Worcestershire sauce
  • 48 ounces prepared mashed potatoes
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown the ground beef and chopped onion in a large skillet over medium-high heat for 6 to 8 minutes, breaking the meat into crumbles as it cooks.
  2. Drain the excess grease, then transfer the beef and onion mixture to the slow cooker.
  3. Add the frozen mixed vegetables, cream of mushroom soup, French onion soup mix, and Worcestershire sauce.
  4. Stir until all ingredients are evenly combined.
  5. Cover and cook on Low for 4 to 6 hours or on High for about 3 hours.
  6. Spread the prepared mashed potatoes evenly over the cooked beef mixture.
  7. Sprinkle the shredded cheddar cheese over the mashed potatoes.
  8. Cover and cook on Low for another 15 minutes, or until the cheese melts.
  9. For a browned topping, transfer the mixture to an oven-safe dish and broil for about 5 minutes.

Notes

  1. Brown and drain the ground beef before adding it to the slow cooker for better flavor and less grease.
  2. Use sharp cheddar cheese for a richer, more savory topping.
  3. Add garlic powder, fresh thyme, or black pepper for extra flavor.
  4. Only place the slow cooker insert under the broiler if the manufacturer confirms it is broiler-safe.
  5. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  6. Freeze cooled portions in freezer-safe containers for up to 3 months.
