- 3 large English cucumbers, thinly sliced
- 1/2 cup freshly grated Parmesan cheese
- 1 cup croutons
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1 small garlic clove, minced
- 2 tablespoons olive oil
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Wash and dry the cucumbers thoroughly and slice them thinly.
- Pat cucumber slices dry with paper towels to remove excess moisture.
- In a small bowl whisk together mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, minced garlic, olive oil, salt, and pepper until smooth.
- Place cucumbers in a large bowl and add half of the Parmesan cheese.
- Drizzle dressing gradually over the cucumbers and toss gently to coat evenly.
- Top with remaining Parmesan and croutons.
- Toss lightly and serve immediately.
