Description

This Cucumber, Onion, and Tomato Salad is the perfect summer side dish—fresh, crisp, and tossed in a tangy vinegar dressing. Light, quick to prepare, and full of garden flavor, it’s ideal for barbecues, picnics, or an easy vegan side.


Ingredients

  • 3 medium tomatoes, diced

  • 3 cucumbers, peeled and sliced

  • 1 onion, thinly sliced

  • ½ cup vinegar (white or apple cider)

  • 1 tsp cracked black pepper

  • 2 tbsp sugar

  • 2 tsp salt

  • 1 cup water

  • ¼ cup olive oil


Instructions

  • Dice tomatoes, slice cucumbers, and thinly slice onion. Add to a salad bowl.

  • In a separate bowl or jar, whisk vinegar, pepper, sugar, salt, water, and olive oil until sugar and salt dissolve.

  • Pour dressing over vegetables and toss gently to coat.

  • Cover and refrigerate for 15–20 minutes.

  • Serve chilled or at room temperature.

Notes

Use the freshest veggies for the best flavor.

Soak onion slices in cold water for 5 minutes if you prefer a milder taste.

Swap vinegars (apple cider, red wine) for different flavor notes.

Add fresh herbs like dill, parsley, or basil for brightness.

For crisper texture, store vegetables and dressing separately until ready to serve
