Description

Fresh cucumber salsa made with crisp vegetables, lime juice, and herbs. A quick no-cook recipe perfect for chips or toppings.


Ingredients

Scale
  • 1 ½ cups chopped cucumbers
  • ¼ cup chopped red onion
  • ½ cup chopped red bell pepper
  • 1 clove garlic minced
  • 1 tablespoon jalapeños
  • 2 tablespoons cilantro
  • 1 ½ tablespoons lime juice
  • ½ tablespoon olive oil
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper

Instructions

  1. Chop all vegetables into small pieces
  2. Combine cucumber onion bell pepper cilantro garlic and jalapeño in a bowl
  3. Whisk lime juice olive oil salt and pepper
  4. Pour vinaigrette over vegetables
  5. Toss well and let sit before serving

Notes

  1. Adjust jalapeño for heat preference
  2. Use fresh lime juice for best flavor
  3. Pat cucumbers dry to avoid excess water
