Description

A light and refreshing cucumber strawberry salad with fresh herbs, simple vinaigrette, and optional cheese and nuts perfect for summer meals.


Ingredients

Scale
  • 1 cup strawberries, hulled and sliced
  • 1 large English cucumber, thinly sliced
  • 1/4 cup crumbled feta or goat cheese
  • 2 tablespoons fresh mint or basil
  • 2 tablespoons slivered almonds or seeds
  • 1 tablespoon lemon juice or balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • 2 tablespoons olive oil
  • Salt and black pepper

Instructions

  1. Wash and dry strawberries and cucumbers
  2. Slice strawberries and cucumbers into thin pieces
  3. Whisk lemon juice, honey, olive oil, salt, and pepper
  4. Combine cucumbers, strawberries, herbs, and cheese in a bowl
  5. Drizzle dressing and toss gently
  6. Top with nuts and serve immediately

Notes

  1. Use firm ripe strawberries for best texture
  2. English or Persian cucumbers work best
  3. Add greens like spinach or arugula if desired
