Description

A creamy custard peach pie made with Greek yogurt, sweet peaches, flaky pie crust, and a buttery streusel topping. This cozy dessert works with fresh, canned, or frozen peaches.


Ingredients

  • 1 single pie crust pastry
  • 1 cup Greek yogurt, labne, or sour cream
  • 3 large egg yolks
  • 3/4 cup sugar
  • 5 medium peaches, peeled and sliced 1/2 inch thick
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 cup butter
  • 1/3 cup all-purpose flour, for streusel
  • 1/8 cup sugar, for streusel

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Roll the pie crust slightly larger than the pie plate, place it in the plate, trim the edge, and crimp as desired.
  3. Arrange the peeled and sliced peaches evenly over the bottom of the pie crust.
  4. Whisk the Greek yogurt, egg yolks, flour, sugar, and vanilla until smooth.
  5. Pour the custard mixture evenly over the peaches.
  6. Bake the pie for 30 minutes, or until the custard just begins to set.
  7. While the pie bakes, rub the butter into the flour until the mixture forms crumbs, then mix in the sugar.
  8. Remove the pie from the oven and sprinkle the streusel over the center.
  9. Bake for 15 more minutes, or until a knife inserted in the center comes out clean.
  10. Cool the pie on a wire rack for 1 hour before serving warm.

Notes

  1. For canned peaches, use 2 cans of sliced peaches and drain them well before adding them to the crust.
  2. For frozen peaches, use 20 ounces of frozen peach slices, thawed, drained, and brought to room temperature.
  3. Sour cream can replace Greek yogurt for a richer custard.
  4. Rhubarb, blueberries, cherries, or nectarines can replace peaches in this style of custard pie.
  5. Cover the crust edge with foil or a pie shield if it browns too quickly.
