Description

A luxurious Dark Chocolate Raspberry Mousse Cake that blends rich chocolate sponge with airy raspberry mousse and silky ganache.


Ingredients

  • For the Cake:
    1 cup all-purpose flour
    1/2 cup unsweetened cocoa powder
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup unsalted butter, softened
    1 cup granulated sugar
    2 large eggs
    1 teaspoon vanilla extract
    1/2 cup buttermilk

  • Raspberry Mousse:
    1 cup fresh raspberries
    1/4 cup granulated sugar
    1 cup heavy cream
    1 teaspoon vanilla extract
    4 ounces dark chocolate, melted and cooled

  • Chocolate Ganache:
    4 ounces dark chocolate, chopped
    1/2 cup heavy cream


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Whisk flour, cocoa, baking powder, baking soda, and salt in a bowl.

  3. Cream butter and sugar; add eggs and vanilla extract.

  4. Combine dry ingredients with the wet mixture, adding buttermilk gradually.

  5. Pour batter into a greased 9-inch pan and bake 25–30 minutes.

  6. Cool cake completely.

  7. Cook raspberries with sugar into a sauce, strain to remove seeds, and let cool.

  8. Whip heavy cream and vanilla until soft peaks form.

  9. Fold in raspberry puree and melted dark chocolate to make the mousse.

  10. Spread mousse over the cooled cake and chill for at least 30 minutes.

  11. Heat heavy cream for ganache, pour over chopped dark chocolate, and stir until smooth.

  12. Pour ganache over the chilled cake and garnish with raspberries.

Notes

Use high-quality dark chocolate for best flavor.

Chill the mousse for at least 30 minutes before assembling.

Decorate with fresh raspberries and chocolate shavings for a professional finish.
