Ingredients
-
2 cups raspberries (fresh or thawed frozen)
-
¼ cup white sugar (adjust to taste)
-
1 packet (about 2 ½ tsp) unflavored gelatin
-
2 tbsp cold water (for blooming gelatin)
-
1 ½ cups heavy whipping cream (cold)
-
1 tbsp lemon juice (fresh)
-
½ tsp vanilla extract
Instructions
-
Blend raspberries in a blender or food processor until smooth.
-
Strain the puree using a fine sieve to remove seeds. Set aside.
-
In a small bowl, bloom gelatin by sprinkling it over cold water. Let sit for 5–10 minutes.
-
In a saucepan over low heat, melt bloomed gelatin with sugar and 2–3 tablespoons of raspberry puree. Stir until dissolved. Let cool slightly.
-
In a large bowl, whip cold cream with a hand or stand mixer until soft peaks form.
-
Mix the cooled gelatin blend into the remaining raspberry puree. Add lemon juice and vanilla.
-
Gently fold the raspberry mix into the whipped cream using a spatula. Keep it light and fluffy.
-
Spoon mousse into serving glasses and chill in the fridge for at least 2 hours.
-
Serve with toppings like extra raspberries, whipped cream, or mint.
Notes
-
Swap sugar with honey or maple syrup if desired.
-
Use coconut cream for a dairy-free version.
-
Agar-agar works as a vegetarian gelatin substitute (use half the amount).
-
It can be frozen, but the texture may soften slightly after thawing.
-
Store in the fridge for up to 3 days in covered containers.
