- 1 large egg
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon vegetable oil
- 3–4 ounces turkey ham, diced or sliced
- 1/2 cup sliced mushrooms (button or cremini)
- 3/4 cup shredded light cheese (reduced-fat mozzarella)
Instructions
- Whisk together the kefir and egg until smooth
- Mix in the salt, baking powder, and vegetable oil
- Stir in the flour gradually until a soft, slightly thick batter forms
- Heat a nonstick skillet over medium heat and lightly grease with oil
- Pour the batter into the skillet and spread evenly into a round pizza shape
- Arrange the turkey ham and mushrooms evenly over the dough
- Sprinkle the shredded cheese on top
- Cover with a lid and cook over low to medium-low heat for 10–12 minutes until the bottom turns golden and the cheese melts
- Remove from heat, slice, and serve hot
