Description
This zesty Italian pasta salad features rotini, fresh vegetables, pepperoni, salami, and mozzarella pearls tossed in a bright homemade Italian dressing. Perfect make-ahead cold pasta salad for any occasion.
Ingredients
1 recipe homemade Italian Dressing
1 lb. rotini pasta
3.5–4 oz. pepperoni, quartered
4 oz. sliced salami, quartered
1 pint cherry tomatoes, halved
1 cup black olives, drained and halved
1 orange bell pepper, chopped
1 green bell pepper, chopped
½ cup finely diced red onion
2 tbsp chopped pepperoncini
8 oz. mozzarella pearls
Parmesan and parsley for garnish
Instructions
1. Prepare the Italian Dressing according to directions.
2. Cook pasta in salted water until al dente. Drain.
3. Pour half of the dressing over warm pasta and toss.
4. Add all remaining ingredients and toss to combine.
5. Chill for at least 30 minutes, up to 24 hours.
6. Before serving, toss with remaining dressing and garnish with parsley and Parmesan.
Notes
Make ahead up to one day in advance. Keep extra dressing to toss before serving for maximum freshness. Store leftovers up to 3 days refrigerated.
