Description

Easy Rhubarb Crisp is a simple spring dessert with tart rhubarb and a buttery crumble topping, perfect served warm with vanilla ice cream.


Ingredients

Scale
  • 2 pounds sliced rhubarb
  • 1/4 cup cornstarch
  • 3/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1 cup oats
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 1 stick cold butter

Instructions

  1. Preheat oven to 400°F and butter a casserole dish
  2. Mix rhubarb, cornstarch, sugar, and cinnamon
  3. Spread mixture into dish
  4. Combine oats, flour, sugar, cinnamon, and salt
  5. Cut in butter until crumbly
  6. Spread topping over filling
  7. Bake for 35 minutes until golden and bubbly
  8. Rest for 10 minutes before serving

Notes

  1. Use frozen rhubarb thawed and drained
  2. Use cold butter for best topping texture
  3. Add extra cornstarch if rhubarb is watery
  4. Do not reduce sugar
  5. Let rest before serving for proper thickening
