- 2 Tablespoons Extra-virgin Olive Oil
- 1 Medium Onion, diced
- 2–3 Garlic Cloves, minced
- 1 pound Lean Ground Beef
- 1½ Cup Cooked Brown Rice
- 14.5 ounces Diced Tomatoes
- 1 Tablespoon Tomato Paste
- 1 Teaspoon Dried Oregano
- 2 teaspoons Paprika
- Kosher salt and pepper, to taste
- 7 Large Bell Peppers, top and core removed
- 1 Cup Shredded Cheddar Jack Cheese
- Freshly chopped parsley
Instructions
- Preheat oven to 375 F and place peppers cut side up in a baking dish.
- Heat oil and sauté onion until softened.
- Add garlic and cook for 1 minute.
- Add ground beef and cook until browned.
- Stir in rice, diced tomatoes, tomato paste, oregano, and paprika.
- Cook 4-5 minutes until mixture reduces slightly.
- Season with salt and pepper.
- Stuff peppers with the beef and rice mixture and bake 10-12 minutes.
- Top with cheese and bake 5-7 minutes more.
- Garnish with parsley and serve.
Notes
- Use quinoa or cauliflower rice as substitutes.
- Adjust paprika to taste.
- Use ground turkey or chicken instead of beef.
- Swap olive oil for any neutral oil.
- Use light or fat-free cheese if desired.
