Description
This easy stuffed pepper soup delivers classic stuffed pepper flavors with tender beef, sweet peppers, and a rich tomato broth.
Ingredients
3/4 cup uncooked rice
1 tablespoon olive oil
1/2 medium onion chopped
1.5 pounds lean ground beef
3 cloves garlic minced
1 red bell pepper chopped finely
1 green bell pepper chopped finely
1 can tomato sauce (13.5 oz)
1 can fire-roasted diced tomatoes (28 oz)
4 cups chicken broth
1/4 teaspoon Italian seasoning
1 teaspoon paprika
Salt & pepper to taste
Instructions
1. Cook the rice according to package directions.
2. Sauté onion in oil for 5–7 minutes.
3. Add ground beef and cook for 5 minutes.
4. Stir in garlic.
5. Add peppers, tomato sauce, diced tomatoes, broth, Italian seasoning, and paprika.
6. Bring to a boil, then simmer 15 minutes.
7. Add cooked rice and simmer 10 minutes more. Season with salt and pepper.
Notes
Use fire-roasted tomatoes for extra flavor.
Swap jasmine rice with any long-grain rice.
Add rice only when serving if freezing.
