Description
Creamy and healthy easy white chicken chili made in 25 minutes.
Ingredients
1 tbsp olive oil
1 large onion (diced)
1 tbsp minced garlic (3 cloves)
2 cups chicken broth
2 (14-oz) cans great Northern beans (drained)
2 (4-oz) cans mild green chilies (with juices)
1 lb boneless skinless chicken breasts (diced)
1 cup corn kernels
2 tsp chili powder
1 tsp ground cumin
½ tsp dried oregano
½ tsp salt
½ tsp black pepper
⅔ cup sour cream
Instructions
1. Heat olive oil in a large pot and cook onions for 4 minutes.
2. Add garlic and cook 30 seconds more.
3. Add broth, beans, chilies, chicken, corn, and spices. Bring to a boil then simmer 10 minutes.
4. In a small bowl, mix sour cream with ½ cup hot chili. Stir into pot until creamy.
5. Optional: Add ¼ cup cornmeal for thicker texture. Serve warm.
Notes
For a thicker chili, stir in cornmeal at the end. Use Greek yogurt for a lighter option.
