Description

A fun and simple vegan treat that resembles tiny jelly pearls, perfect for garnishing desserts, fruit cups, puddings, or enjoying on their own.


Ingredients

Scale
  • 1 tablespoon agar-agar powder
  • 1 cup water
  • A splash of food coloring, optional
  • 1 to 2 teaspoons sugar, optional

Instructions

  1. Mix the agar-agar powder with the water in a small pot, stirring until evenly dispersed.
  2. Place the pot over medium heat and stir often until the mixture reaches a boil.
  3. Add food coloring and sugar, if desired, and stir until fully dissolved.
  4. Turn off the heat and let the mixture cool for 1 to 2 minutes.
  5. Fill a bowl with very cold water.
  6. Drop small amounts of the warm agar mixture into the cold water using a clean dropper, squeeze bottle, or small spoon.
  7. Let the beads sit in the cold water for about 5 minutes to set.
  8. Gently strain the beads with a slotted spoon or fine sieve.
  9. Rinse the beads in cool water and serve chilled.

Notes

  1. Use a clean dropper for the most consistent bead size.
  2. Work close to the cold water surface for rounder beads.
  3. Adjust sugar to taste or omit it for a neutral flavor.
  4. Store leftovers in an airtight container with a little cool water or light syrup for up to 2 days.
