Description

A quick, flavorful, low-carb skillet meal made with ground pork, shredded cabbage, carrots, garlic, ginger, and a savory soy sauce mixture. It delivers the classic flavor of an egg roll without the wrapper or deep-frying.


Ingredients

  • 1 pound ground pork, ground chicken, or ground turkey
  • 1 tablespoon sesame oil
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 tablespoon freshly grated ginger
  • 1 14-ounce bag coleslaw mix with shredded cabbage and carrots
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce, optional
  • 1 teaspoon toasted sesame seeds
  • 3 green onions, thinly sliced
  • Salt and black pepper, to taste

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground pork and cook for 6 to 7 minutes, breaking it into small pieces, until browned and no longer pink.
  2. Drain excess grease if necessary. Add the sesame oil and diced onion, then cook for 2 minutes.
  3. Stir in the minced garlic and grated ginger. Cook for 30 seconds, just until fragrant.
  4. Add the coleslaw mix in two batches, tossing after each addition.
  5. Cook for 5 to 7 minutes, stirring occasionally, until the cabbage becomes tender but retains a slight bite.
  6. Pour in the soy sauce, rice vinegar, and chili garlic sauce. Toss until the sauce evenly coats the meat and vegetables.
  7. Cook for another 2 to 3 minutes so the flavors combine.
  8. Remove the skillet from the heat. Stir in most of the sliced green onions and toasted sesame seeds.
  9. Taste and adjust with salt, black pepper, or an additional splash of soy sauce.
  10. Serve hot with the reserved green onions and additional sesame seeds.

Notes

  1. Use a wide 12-inch skillet so the meat browns and moisture escapes from the cabbage.
  2. Ground chicken or ground turkey may replace the pork.
  3. For a gluten-free version, use certified gluten-free tamari.
  4. Add chili garlic sauce or red pepper flakes for more heat.
  5. Refrigerate leftovers in an airtight container for up to 4 days.
