Description

A creamy Mexican street corn dip made with sweet corn, spices, and cheese.


Ingredients

Scale
  • 2 cups fresh corn kernels
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1/2 tablespoon jalapeño chopped
  • 1/2 tablespoon grated garlic
  • 2 tablespoons cilantro chopped
  • 1 1/2 tablespoons lemon juice
  • 1/2 tablespoon elote seasoning
  • 1 tablespoon butter
  • 1 tablespoon Parmesan cheese
  • Pinch of chili powder

Instructions

  1. Heat butter in a pan
  2. Add garlic and jalapeño and sauté briefly
  3. Add corn and cook until slightly caramelized for 5 to 6 minutes
  4. Let the mixture cool
  5. Mix in mayonnaise, sour cream, cilantro, lemon juice, and seasoning
  6. Refrigerate for 30 minutes
  7. Garnish with Parmesan and chili powder before serving

  2. Adjust spice level to taste
