Fiesta Lime Chicken with avocado salsa is a bright and flavorful chicken dinner made with lime juice, Mexican spices, and fresh salsa for a quick and healthy meal.

- 1 pound chicken breasts, pounded to even thickness
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Zest from 1 lime
- 1 teaspoon chili powder
- 1 teaspoon brown sugar
- 3/4 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chipotle chili powder (optional)
- 1/4 teaspoon black pepper
- 2 medium avocados, chopped
- 1 cup cherry tomatoes, quartered
- Fresh corn from 1 ear
- 1/3 cup finely chopped red onion
- 1/2 red bell pepper, chopped
- 1 jalapeno pepper, diced
- 2 tablespoons chopped cilantro
- 1 garlic clove, minced
- 2 tablespoons lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Whisk olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder and pepper together and rub evenly over chicken.
- Let chicken sit for 30 minutes at room temperature or refrigerate up to 8 hours then bring to room temperature before cooking.
- In a bowl combine tomatoes, corn, red onion, bell pepper, jalapeno, cilantro, garlic, lime juice, cumin, salt and pepper and chill.
- Heat a greased skillet over medium high heat and cook chicken 3 to 5 minutes until browned.
- Flip chicken, cover and cook another 5 to 7 minutes until internal temperature reaches 165.
- Remove chicken and rest 5 minutes before slicing.
- Gently fold chopped avocados into the salsa before serving.
- Serve sliced Fiesta Lime Chicken topped with avocado salsa.

- Chicken will have deeper flavor if marinated longer.
- Slice large chicken breasts horizontally for even cooking.
- Avocado salsa is best served fresh to avoid browning.
