Description

Fiesta Ranch Dip is a creamy, zesty appetizer made with ranch seasoning, corn, beans, Rotel, and cheese. Perfect for parties and quick snacks.


Ingredients

  • 16 ounces sour cream
  • 2 tablespoons ranch seasoning mix
  • 1 can sweet corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can Rotel, drained
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup cooked crumbled bacon (optional)
  • Salt and pepper to taste

Instructions

  1. Drain corn, black beans, and Rotel thoroughly.
  2. Rinse and dry black beans.
  3. In a large bowl, mix sour cream and ranch seasoning until smooth.
  4. Add corn, beans, Rotel, cheese, and bacon.
  5. Stir until well combined.
  6. Taste and adjust salt and pepper.
  7. Cover and refrigerate for 1-2 hours before serving.
