Description

Juicy fresh peaches bake under a buttery buttermilk biscuit topping in this classic Fresh Peach Cobbler. Serve it warm with vanilla ice cream or whipped cream for a comforting summer dessert.

  • 10 cups peeled, chopped fresh peaches, cut into 1– to 1 1/2-inch chunks
  • 1/4 cup packed light or dark brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon salt
  • 2 cups all-purpose flour, spooned and leveled
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup cold buttermilk, plus 1 tablespoon more if needed
  • 1 large egg
  • 1 tablespoon milk or buttermilk
  • Optional: 2 tablespoons granulated sugar mixed with 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 9×13-inch baking pan or any 3- to 4-quart baking dish.
  2. Add the chopped peaches, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, nutmeg, ginger, and salt to a large bowl. Stir until the peaches are evenly coated.
  3. Spread the peach filling into the prepared baking dish. Bake for 10 minutes, then remove from the oven. Keep the oven on.
  4. Whisk the flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  5. Add the cold cubed butter. Cut it into the flour mixture with a pastry cutter or two forks until coarse pea-size crumbs form.
  6. Pour in the cold buttermilk and stir gently until the dough comes together. Add 1 more tablespoon buttermilk only if the dough feels too dry.
  7. Flatten handfuls of dough into rough patties and arrange them over most of the warm peach filling.
  8. Beat the egg with 1 tablespoon milk or buttermilk. Brush the egg wash over the biscuit dough.
  9. Sprinkle the topping with cinnamon sugar, if using.
  10. Bake for 40 to 50 minutes, until the biscuit topping is golden brown and the peach filling bubbles around the edges.
  11. Insert a toothpick into the biscuit topping. If it comes out clean, the cobbler is done.
  12. Cool for 5 minutes before serving warm with vanilla ice cream or whipped cream.

Notes

  1. Use ripe but firm peaches for the best texture.
  2. Cut peaches into large chunks so the filling stays juicy and substantial.
  3. Keep the butter and buttermilk cold for the best biscuit topping.
  4. Store leftovers covered in the refrigerator for up to 5 days.
  5. Reheat portions in the microwave or warm them in a 350°F oven for a crisper topping.
