Description

Fresh Peach Pound Cake is a rich, buttery summer dessert made with diced fresh peaches, buttermilk, vanilla, and peach schnapps for bold peach flavor.


Ingredients

  • 4 cups all-purpose flour, sifted once
  • 3 cups granulated sugar
  • 2 cups unsalted butter, softened to room temperature
  • 1/2 cup buttermilk
  • 1/2 cup peach schnapps
  • 6 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 1/2 cups fresh peaches, diced
  • Baking spray with flour or solid vegetable shortening and granulated sugar, for preparing the pan
  • Optional cream cheese glaze, for serving

Instructions

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. Coat a 10-inch, 16-cup tube pan thoroughly with baking spray with flour, or grease it with solid vegetable shortening and dust it with granulated sugar.
  3. Add the flour, sugar, butter, buttermilk, peach schnapps, eggs, and vanilla to the bowl of a stand mixer in the order listed.
  4. Beat on low speed for 1 minute, then stop the mixer and scrape the sides and bottom of the bowl.
  5. Beat on medium speed for 2 minutes until the batter looks smooth and thick.
  6. Fold in the diced fresh peaches gently with a spatula.
  7. Pour the batter into the prepared tube pan and smooth the top.
  8. Bake for 1 hour 25 minutes to 1 hour 35 minutes, or until a wooden pick inserted into the center comes out clean or with dry crumbs.
  9. Cool the cake in the pan on a wire rack for 20 to 30 minutes.
  10. Carefully invert the cake onto a serving plate and drizzle with cream cheese glaze if desired.

Notes

  1. Use ripe but firm peaches for the best flavor and texture.
  2. Pat very juicy peaches dry before folding them into the batter.
  3. Peach nectar or peach juice may replace peach schnapps for a nonalcoholic version.
  4. Some alcohol may remain after baking, so choose a substitution when serving guests who avoid alcohol.
  5. Store leftovers in an airtight container in the refrigerator for up to 5 days.
