Ingredients

Scale
  • 3 ripe peaches, diced
  • 1 plum tomato, seeded and chopped
  • 1/2 jalapeño, seeds removed and chopped
  • 1/2 small purple onion, chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt to taste
  • Black pepper to taste
  • Extra cilantro for garnish

Instructions

  1. Wash and prepare all produce.
  2. Dice the peaches into 1/4-inch cubes.
  3. Seed and chop the tomato.
  4. Chop the jalapeño, onion, and cilantro.
  5. Place tomato, jalapeño, onion, cilantro, and lime juice into a food processor.
  6. Pulse several times until finely chopped but still chunky.
  7. Add diced peaches to a large bowl.
  8. Pour the salsa mixture over the peaches.
  9. Stir gently to combine.
  10. Season with salt and pepper to taste.
  11. Garnish with extra cilantro and serve immediately.

Notes

  1. For extra spice, leave some jalapeño seeds in the salsa.

  3. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  4. Do not freeze the salsa.
