Description

Fresh Pineapple Crisp is a warm fruit dessert made with juicy pineapple chunks, brown sugar, oats, flour, and cold butter. The pineapple bakes into a sweet-tangy filling while the topping turns golden, buttery, and crisp.


Ingredients

  • 3 cups fresh pineapple chunks, about 1 medium pineapple
  • 1 tablespoon cornstarch
  • 3 tablespoons brown sugar
  • 1/3 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/3 cup brown sugar
  • 1/2 cup cold unsalted butter, cut into small cubes
  • Pinch of salt, optional
  • 1/2 teaspoon vanilla extract, optional

Instructions

  1. Preheat the oven to 350°F. Lightly butter a 2.4-quart baking dish.
  2. Slice off the top and bottom of the pineapple. Remove the peel, trim away the eyes, quarter the pineapple lengthwise, remove the core, and cut the fruit into bite-size chunks.
  3. Add the pineapple chunks to a bowl. Sprinkle with cornstarch and 3 tablespoons brown sugar, then stir until evenly coated.
  4. Transfer the pineapple mixture to the prepared baking dish and spread it evenly.
  5. In a separate bowl, combine the flour, rolled oats, 1/3 cup brown sugar, cold butter, and salt if using.
  6. Rub the butter into the dry ingredients with your fingertips until the mixture forms coarse crumbs.
  7. Scatter the crumb topping evenly over the pineapple without pressing it down.
  8. Bake for 40 to 45 minutes, or until the topping turns lightly golden and the fruit bubbles around the edges.
  9. Let the crisp cool for 10 minutes before serving.
  10. Serve warm with vanilla ice cream, whipped cream, cream, or custard.

Notes

  1. Fresh pineapple gives the brightest flavor, but well-drained canned pineapple or thawed frozen pineapple can also work.
  2. Use cold butter for the crispest topping.
  3. For a gluten-free version, use gluten-free flour and certified gluten-free oats.
  4. Let the crisp rest before serving so the juices thicken slightly.
  5. Store leftovers covered in the refrigerator for up to 3 days and reheat in a 325°F oven.
