- 2 cups peaches or apples, peeled and diced

- 1 teaspoon cinnamon

Instructions
- In a large bowl, combine the flour, salt, and sugar.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Stir in ice water, one tablespoon at a time, until the dough comes together.
- Divide the dough into two balls, flatten them into disks, wrap in plastic, and refrigerate for at least 30 minutes.
- In another bowl, mix the diced peaches or apples with sugar, cinnamon, and lemon juice.
- On a floured surface, roll one disk of dough to about 1/8 inch thick.
- Cut the dough into 4- to 5-inch circles.
- Place a spoonful of fruit filling in the center of each circle.
- Fold the dough over to form a half-moon shape and crimp the edges tightly with a fork.
- Heat oil in a deep skillet over medium heat.
- Fry the pies for 3 to 4 minutes per side, or until golden brown.
- Drain the pies on paper towels.
- Dust with powdered sugar before serving.
Notes
- Adjust the sugar based on the sweetness of the fruit.
- Do not overfill the pies, or the filling may leak during frying.
- Keep the dough chilled for the flakiest texture.
- Reheat leftovers in an oven or air fryer for the best crust.
