- 12 green cherry tomatoes, cut in half
- 1/2 cup all-purpose flour
- 1 large egg
- 1 splash water or milk
- 1/2 cup Italian-seasoned breadcrumbs
- Canola oil, for frying
- 1 ripe avocado
- 1/2 cup ranch dressing
Instructions
- Prepare three shallow bowls: one with flour, one with the egg whisked with a splash of water or milk, and one with Italian-seasoned breadcrumbs.
- Pat the tomato halves dry with paper towels.
- Dip each tomato half into the flour, then into the egg wash, and finally into the breadcrumbs.
- Repeat until all tomato halves have an even breadcrumb coating.
- Heat enough canola oil in a skillet to coat the bottom of the pan.
- Add the breaded tomatoes in a single layer and fry for 2 to 3 minutes per side, until lightly golden brown.
- Transfer the fried tomatoes to paper towels or a brown paper bag to drain.
- Cut the avocado in half, remove the pit, and scoop the flesh into a mini food processor or blender.
- Add ranch dressing and pulse until smooth and creamy.
- Serve the fried green cherry tomatoes immediately with avocado ranch dipping sauce.
Notes
- Best served hot right after frying.
- Do not reheat in the microwave because the coating softens.
- For extra flavor, add garlic powder, black pepper, or Parmesan to the breadcrumbs.
- Use firm green cherry tomatoes for the best texture.
