Description

This easy Frito Corn Salad combines sweet corn, black beans, Rotel, bell pepper, cheddar cheese, creamy seasoned dressing, and crunchy Fritos. It makes a colorful five-minute side dish for cookouts, potlucks, picnics, and family dinners.


Ingredients

  • 2 (15-ounce) cans sweet corn, drained
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can Rotel, drained
  • 1 bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 1 (9.25-ounce) bag Fritos
  • 2/3 cup sour cream
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin

Instructions

  1. Combine the sour cream, olive oil, salt, black pepper, garlic powder, onion powder, and cumin in a small bowl.
  2. Whisk the dressing until smooth and fully combined.
  3. Add the drained corn, rinsed black beans, drained Rotel, diced bell pepper, and shredded cheddar cheese to a large mixing bowl.
  4. Toss the vegetables and cheese lightly to distribute the ingredients.
  5. Pour the creamy dressing over the corn mixture.
  6. Fold gently until the dressing evenly coats the salad.
  7. Taste and adjust the seasoning when needed.
  8. Add the Fritos immediately before serving.
  9. Fold the Fritos into the salad two or three times without crushing them.
  10. Serve immediately while the chips remain crunchy.

Notes

  1. Drain the corn, black beans, and Rotel thoroughly so the dressing does not become watery.
  2. Keep the Fritos separate until immediately before serving.
  3. For make-ahead preparation, refrigerate the dressed corn mixture for up to one day and add the chips at serving time.
  4. Store the mixture without Fritos in an airtight container in the refrigerator for up to two days.
  5. Use original or chili cheese Fritos according to your preferred flavor.
  6. Add lime juice, cilantro, or diced jalapeño for an optional flavor variation.
