Description

Easy homemade Fruit Galette with a flaky sour cream crust and mixed fruit filling. A rustic dessert that is simpler than pie and perfect for any season.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 9 tablespoons cold unsalted butter
  • 6 tablespoons sour cream
  • 1 1/2 pounds mixed fruit
  • 1/4 cup granulated sugar
  • 2 teaspoons lemon juice
  • 1 1/2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 large egg
  • 2 teaspoons water
  • Coarse sugar for topping
  • 1 1/2 tablespoons cold butter

Instructions

  1. Combine flour, sugar, and salt in a food processor.
  2. Pulse in cold butter until coarse crumbs form.
  3. Add sour cream and pulse until dough comes together.
  4. Wrap dough, flatten into a disk, and chill for 30 minutes.
  5. Mix fruit, sugar, lemon juice, cornstarch, and salt in a bowl.
  6. Roll dough into a 12 to 13 inch circle and place on a baking sheet.
  7. Brush dough lightly with egg wash.
  8. Place fruit filling in the center leaving a 2 inch border.
  9. Fold dough over the filling and pleat edges.
  10. Dot fruit with butter and brush crust with egg wash.
  11. Sprinkle with coarse sugar if desired.
  12. Bake at 400°F for 30 to 35 minutes until golden and bubbling.
  13. Cool before slicing and serving.

Notes

  1. Increase cornstarch to 2 tablespoons for very juicy fruit.
  2. Keep butter cold for the flakiest crust.
  3. Allow the galette to cool before slicing.
  4. Use peaches, berries, plums, apples, or pears.
