Ingredients
-
95 g (¾ cup) plain all-purpose flour
-
2 tablespoons cocoa powder
-
1 teaspoon baking powder
-
¼ teaspoon salt
-
225 g (1¼ cups) dark chocolate, chopped
-
56 g (¼ cup) butter (salted or unsalted)
-
2 large eggs, room temperature
-
100 g (¾ cup) caster or granulated sugar
-
90 g (½ cup) Demerara or raw sugar
-
1 teaspoon vanilla extract
-
85 g (½ cup) dark or milk chocolate chips
Instructions
-
Preheat oven to 160ºC (320ºF) fan or 170ºC (338ºF) conventional. Line a baking tray with parchment paper.
-
Melt chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth and glossy. Remove from heat and stir in vanilla extract.
-
Whip eggs and sugars in a separate bowl for 5 minutes until pale and fluffy. This creates the signature crackly top.
-
Combine dry ingredients – sift together flour, cocoa powder, baking powder, and salt. Stir in chocolate chips.
-
Fold together – gently fold the melted chocolate mixture into the whipped eggs, then fold in the dry ingredients just until combined.
-
Scoop and bake – place tablespoons of batter onto the tray, spacing evenly. Bake for 12–14 minutes, until the tops are shiny and set.
-
Cool and serve – allow brookies to rest for 10 minutes before transferring to a wire rack. Sprinkle lightly with sea salt if desired.
Notes
Do not overbake – remove when the edges are set but the center is still soft.
Use room temperature eggs for better texture and volume.
Mix gently to keep that fudgy, brownie-like texture.
Customize with a mix of dark and milk chocolate chips for layered flavor.
Store at room temperature for up to 4 days or freeze for up to 2 months.
