Description

Rich, moist dark chocolate brownies made with finely shredded zucchini, dark cocoa powder, chocolate chips, and an optional coarse sea salt finish.

Ingredients

Scale
  • 1/4 cup solid coconut oil
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 1/2 cups finely shredded zucchini
  • 1/4 teaspoon ground cinnamon
  • 2/3 cup dark cocoa powder
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 2 to 3 tablespoons dark chocolate chips
  • Coarse sea salt, for garnish if desired

Instructions

  1. Preheat the oven to 350°F. Coat an 8-by-8-inch square baking pan with nonstick baking spray.
  2. Mix the coconut oil and granulated sugar in a large mixing bowl until evenly combined.
  3. Add the vanilla extract, eggs, and finely shredded zucchini. Whisk until glossy and well combined.
  4. Add the cinnamon, dark cocoa powder, all-purpose flour, baking powder, and salt.
  5. Stir just until a thick brownie batter forms and no dry streaks remain.
  6. Spread the batter evenly in the prepared pan and gently push it into the corners.
  7. Sprinkle the dark chocolate chips evenly over the top.
  8. Bake for 28 to 30 minutes, or until a toothpick inserted near the center shows moist crumbs.
  9. Remove the pan from the oven and let the brownies cool completely.
  10. Cut the brownies into 16 squares and garnish with coarse sea salt if desired.

Notes

  1. Do not squeeze the shredded zucchini unless it releases an unusual amount of liquid.
  2. Replace the coconut oil with 1/4 cup melted and slightly cooled butter if preferred.
  3. For fudgy brownies, remove the pan when a toothpick shows moist crumbs rather than coming out completely clean.
  4. Store cooled brownies in a tightly sealed container at room temperature for up to three days.
  5. Freeze individually wrapped brownies in a freezer bag for up to three months.
