Colorful no-bake Funfetti Energy Balls made with oats, natural peanut butter, sticky sweetener, seeds, mini chocolate chips, and sprinkles. These kid-friendly snack bites take 10 minutes to prep and chill into soft, chewy 1-inch balls.

- 1 1/4 cups old-fashioned oats
- 1/2 cup natural peanut butter, almond butter, cashew butter, or sunflower seed butter
- 1/3 cup honey, agave nectar, or maple syrup
- 2 tablespoons hemp seeds, chia seeds, or ground flax seeds
- 1 teaspoon vanilla extract
- 1 pinch sea salt
- 1/4 cup mini chocolate chips
- 1/4 cup sprinkles
Instructions
- Add the oats, peanut butter, sweetener, seeds, vanilla extract, and sea salt to a food processor.
- Pulse in 10- to 20-second intervals, scraping down the sides as needed, until the mixture comes together but still looks slightly chunky.
- Transfer the mixture to a medium bowl.
- Stir in the mini chocolate chips and sprinkles until evenly distributed.
- Chill the bowl for 20 to 30 minutes to help the dough firm up.
- Scoop the mixture with a small cookie scoop and roll into 1-inch balls.
- Repeat until all the dough is shaped into about 18 energy balls.
- Store in an airtight container in the refrigerator until ready to serve.
Notes
- Age recommendation: 12 months and up.
- Use certified gluten-free oats if you need a gluten-free snack.
- For a nut-free version, use sunflower seed butter.
- Do not add sprinkles to the food processor, because the colors may bleed.
- If the mixture feels dry, add 1 tablespoon extra peanut butter or sweetener.
- If the mixture feels too wet, add 1 to 2 tablespoons extra oats.
- Store refrigerated for up to 1 week or freeze for up to 2 months.
