- 1.5 pounds beef stew meat cut into bite-sized pieces
- 1 pound baby potatoes halved
- 4 tablespoons unsalted butter melted
- 3 cloves garlic minced
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 cup beef broth
- 1 tablespoon olive oil
Instructions
- Cut beef stew meat into bite-sized pieces and halve the baby potatoes
- Optional: parboil the potatoes for a few minutes
- Heat olive oil in a skillet over medium-high heat and sear beef until browned
- Combine melted butter, garlic, onion powder, paprika, thyme, rosemary, salt, and pepper
- Place potatoes and beef in the slow cooker
- Pour the garlic butter mixture and beef broth over the ingredients
- Cook on low for 6 to 8 hours or on high for 3 to 4 hours until beef is tender
- Let the dish rest for 10 minutes before serving
Notes
- You can substitute chuck roast cut into cubes instead of stew meat
- Add vegetables like carrots or mushrooms for extra flavor
- Garnish with fresh parsley before serving if desired
