Ingredients

- 1 ½ pounds sirloin steak or ribeye, cut into 1-inch cubes
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme or ½ teaspoon dried
- 1 teaspoon fresh rosemary or ½ teaspoon dried
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
Instructions
- Pat steak cubes dry with paper towels and season with salt and pepper
- Heat olive oil in a large skillet over medium-high heat
- Add half the steak cubes in a single layer and sear for 2 minutes without moving
- Flip and cook another 1 to 2 minutes until browned
- Remove steak and repeat with remaining cubes
- Reduce heat to medium and add 2 tablespoons butter
- Stir in garlic, thyme, and rosemary and cook for 30 seconds
- Return steak to the pan and toss with garlic butter
- Add remaining butter and stir until coated and glossy
- Garnish with parsley and serve immediately
Notes
- Do not overcrowd the pan to maintain a proper sear
- Dry steak before cooking for better browning
- Use fresh herbs for stronger flavor if available
- Serve immediately for best texture
