Description

Garlic Parmesan Crockpot Chicken and Potatoes is a cozy, family-friendly dinner that practically cooks itself. Juicy chicken and tender potatoes are slow-cooked in a creamy, garlicky parmesan sauce with mozzarella cheese, making it a satisfying one-pot meal that’s perfect for busy weeknights and sure to win over even the pickiest eaters.

Ingredients

Scale

For the Potatoes:

  • 5 medium-sized potatoes, cubed (about 750 g)

  • 2 tbsp olive oil

  • Salt, pepper, garlic powder, paprika (to taste)

For the Chicken:

  • 1 lb chicken breasts, cubed

  • ½ tsp salt

  • ½ tsp pepper

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1 tsp Italian seasoning

  • 2 tbsp minced garlic

  • Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat)

  • 1 cup shredded mozzarella cheese

Instructions

  • Wash and cube the potatoes. Spray crockpot with non-stick spray.

  • Add potatoes, drizzle with olive oil, and season with salt, pepper, garlic powder, and paprika. Stir to coat.

  • Season chicken with salt, pepper, paprika, onion powder, Italian seasoning, and minced garlic.

  • Add chicken over potatoes in the crockpot. Pour enough Garlic Parmesan sauce to coat.

  • Cover and cook on low for 6 hours, stirring occasionally.

  • Sprinkle mozzarella cheese on top near the end. Cover again to melt.

  • Optional: Drizzle with ranch dressing before serving.

Notes

Yukon Gold or red potatoes work best.

Don’t skip garlic powder for layered flavor.

Add broth or extra sauce if chicken dries out.

For crispier results, broil portions for a few minutes.

Chicken thighs can be used for extra juiciness.
