- 1 pound shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup heavy cream
- 1/4 teaspoon white pepper
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 1/2 cup chicken or vegetable broth
- Pinch of nutmeg
- Fresh parsley or thyme for garnish
Instructions
- Place cubed potatoes in a large pot of salted water and boil until fork-tender.
- Pat shrimp dry and season with paprika, garlic powder, salt, and black pepper.
- Heat olive oil in a skillet and sear shrimp for about 2 minutes per side, then remove.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Add cream and broth, then stir in Parmesan until the sauce thickens.
- Season sauce with nutmeg and black pepper.
- Drain potatoes and mash with butter, cream, and white pepper until smooth.
- Return shrimp to the sauce and cook for 2 to 3 minutes until heated through.
- Serve shrimp and sauce over mashed potatoes and garnish as desired.
Notes
- Do not overcook the shrimp or they will become rubbery.
- Use freshly grated Parmesan for the smoothest sauce.
- Add a splash of broth if the sauce becomes too thick.
