Description

Greek Pasta Salad is an easy make-ahead side filled with fresh vegetables, feta cheese, and Greek dressing – perfect for any meal or gathering.


Ingredients

Scale

16 ounces rotini or other medium pasta

¾ English cucumber diced

1 pint grape tomatoes halved

1 red or orange bell pepper diced

½ cup sliced pitted olives

½ cup crumbled feta cheese

⅓ cup diced red onion

1 cup Greek dressing OR:

¼ cup red wine vinegar

⅓ cup olive oil

½ teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste


Instructions

1. Whisk together dressing ingredients.

2. Cook pasta al dente and rinse under cold water.

3. Combine pasta, vegetables, feta, and olives in a large bowl.

4. Add dressing and toss to coat evenly.

5. Refrigerate for at least 2 hours before serving.

Notes

Add grilled chicken for a complete meal.

For extra flavor, use roasted red peppers or artichoke hearts.

Best served chilled and can be made up to 4 days ahead.
