Description

Easy, healthy, and wholesome Greek yogurt zucchini bread with a moist texture and warm cinnamon flavor.


Ingredients

Scale
  • 1/3 cup canola oil, vegetable oil, or melted coconut oil
  • 1/2 cup honey or organic blue agave
  • 1 large egg
  • 1/2 cup plain Greek yogurt
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup shredded zucchini
  • 2 teaspoons orange zest (optional)
  • 3/4 cup chopped walnuts, raisins, or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F and grease a 9×5-inch loaf pan.
  2. Whisk oil, honey, egg, yogurt, and vanilla together.
  3. Whisk flour, baking powder, baking soda, salt, and cinnamon in a large bowl.
  4. Combine wet and dry ingredients gently.
  5. Fold in zucchini and optional mix-ins.
  6. Transfer batter to prepared loaf pan.
  7. Bake for 40 to 50 minutes until a toothpick comes out clean.
  8. Cool completely before slicing and serving.

Notes

  1. Store at room temperature for up to 5 days.
  2. Freeze for up to 3 months.
  3. Lightly blot very wet zucchini before using.
