Description

Green Chili Chicken Soup is a bold and hearty dish combining tender chicken, green chilies, and savory spices in a rich broth. Inspired by Southwestern and Mexican cuisines, this comforting soup offers a zesty kick with warm, smoky flavors. Whether served on a cold evening or during a casual gathering, it’s a filling and flexible recipe perfect for weeknight dinners or make-ahead meals.

Ingredients

Scale
  • 1 lb boneless skinless chicken thighs or breasts

  • 1 tbsp olive oil

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1 (4 oz) can diced green chilies

  • 1 tsp ground cumin

  • 1/2 tsp chili powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 4 cups chicken broth

  • 1/2 cup corn (optional)

  • 1/2 cup white beans or black beans (optional)

  • 1/4 cup chopped cilantro

  • Juice of 1 lime

Optional Add-ins:

  • 1/4 cup heavy cream or 2 oz cream cheese for a creamy version

  • 1 chopped jalapeño for extra spice

  • 1/2 cup cooked rice or diced potatoes for thickness

Toppings (Optional):

  • Shredded cheese

  • Sour cream

  • Avocado slices

  • Tortilla strips

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add chopped onion and cook until soft, about 4 minutes. Stir in garlic and cook for 1 more minute.

  3. Add green chilies, cumin, chili powder, salt, and pepper. Stir to combine.

  4. Add chicken and chicken broth. Bring to a boil, then reduce heat and simmer for 25–30 minutes.

  5. Remove the chicken, shred it with two forks, and return it to the pot.

  6. Add optional corn, beans, or cream if using. Simmer for another 10 minutes.

  7. Stir in chopped cilantro and lime juice just before serving.

  8. Serve hot with your favorite toppings.

Notes

For milder soup, use only mild green chilies and skip jalapeños.

For spicier flavor, add hot sauce or more chili powder.

This soup freezes well for up to 3 months.

Great for using leftover rotisserie chicken — just add it in step 5.

Garnishes enhance both the flavor and presentation.
