Description

Grilled Avocado Chicken is a fresh and healthy dish made with marinated grilled chicken, creamy avocado, juicy tomatoes, and melted cheese.


Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 California avocados sliced
  • 1 cup cherry tomatoes halved
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • Optional: chopped cilantro, balsamic glaze, diced red onion

Instructions

  1. Whisk olive oil, lime juice, garlic, paprika, cumin, salt, and pepper in a bowl
  2. Add chicken and coat well, then refrigerate for at least 30 minutes
  3. Preheat grill to medium-high heat and oil grates
  4. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F
  5. Top with avocado, tomatoes, and cheese
  6. Close lid for 1-2 minutes until cheese melts
  7. Serve immediately with optional garnishes
