- 4 boneless skinless chicken breasts
- 1 Tablespoon melted butter or olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Fresh lemon wedges (optional)
Instructions
- Fill a bowl with warm water and kosher salt and brine the chicken breasts for 15 minutes.
- Remove the chicken from the brine, rinse with cold water, and pat dry.
- Preheat grill to medium high heat and soak wooden skewers in water for 15 minutes if using.
- Cut chicken into 1 inch pieces and place in a mixing bowl.
- Drizzle olive oil over the chicken and toss to coat.
- Mix salt, pepper, garlic powder, and paprika in a small bowl.
- Sprinkle seasoning over chicken and toss until evenly coated.
- Thread chicken pieces evenly onto skewers.
- Place kabobs on grill and cook for 10 to 14 minutes turning once halfway through.
- Remove from grill and let rest 5 to 10 minutes before serving with lemon juice if desired.
