Description
Juicy grilled citrus chicken marinated with fresh orange, lemon, and lime juice, then finished with a sweet citrus glaze for a bright summer BBQ flavor.

- 1 ½ – 2 pounds chicken breasts
- 1 cup fresh orange juice
- 1 tablespoon orange zest
- 1 large lemon, juice and zest
- 2 large limes, juice and zest
- 4 cloves garlic, minced
- 2 shallots, minced
- ½ cup olive oil
- 2 tablespoons brown sugar
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh rosemary
- 1 tablespoon dried parsley
- 1 teaspoon red pepper flakes
- 2 tablespoons honey
Instructions
- Zest and juice the orange, lemon, and limes then combine the juices and zest with garlic, shallots, olive oil, brown sugar, salt, pepper, rosemary, parsley, and red pepper flakes to make the marinade.
- Lightly pound or butterfly the chicken breasts so they cook evenly.
- Place the chicken in half of the marinade and reserve the other half for the glaze.
- Marinate the chicken in the refrigerator for at least 30 minutes and up to four hours.
- Preheat grill to medium high heat and oil the grill grates.
- Grill chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F.
- For the glaze, add the reserved marinade and honey to a saucepan and simmer for 5 to 6 minutes until thickened.
- Brush the glaze on the chicken during the final minute of grilling.
- Remove from grill and let the chicken rest a few minutes before serving.
Notes
- Use fresh citrus juice for the best flavor.
- Do not marinate longer than four hours to keep the chicken texture firm.
- A meat thermometer helps guarantee the chicken is fully cooked.
