Description

Chunky grilled corn guacamole with creamy avocado, fresh lime, tomato, jalapeño, and cilantro. Perfect Mexican appetizer for chips or tacos.


Ingredients

  • 3 ears fresh corn, shucked
  • 6 ripe avocados, diced
  • 1 large tomato, diced
  • 1/3 cup onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh jalapeño, diced
  • 1 lime, juiced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup cilantro leaves

Instructions

  1. Grill the corn over medium heat until golden with grill marks.
  2. Allow the corn to cool slightly then cut the kernels off the cobs.
  3. Cut the avocados in half remove the pits and dice the flesh.
  4. Scoop the diced avocado into a large bowl.
  5. Add the grilled corn kernels tomato onion garlic and jalapeño.
  6. Pour in the lime juice and sprinkle salt and cumin.
  7. Stir gently to combine while keeping the avocado chunky.
  8. Add the cilantro and mix lightly.
  9. Taste and adjust seasoning then serve immediately.

Notes

  1. Use ripe avocados that yield slightly when pressed.
  2. Allow the grilled corn to cool before mixing with the avocados.
  3. Stir gently to keep the guacamole chunky.
  4. Serve immediately for the freshest flavor.
