Ingredients

Scale

For the Salmon Burgers:

  • 1 lb (450g) fresh salmon, skin removed, finely chopped

  • 1 egg

  • ⅓ cup panko breadcrumbs

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp chopped fresh dill or parsley

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp paprika

  • Salt and pepper, to taste

  • 1 tbsp olive oil (for cooking or brushing grill)

For the Avocado Salsa:

  • 1 ripe avocado, diced

  • 1 tbsp lime juice

  • 1 small poblano pepper, roasted, peeled, and chopped

  • 2 green onions, sliced

  • 1 tbsp chopped cilantro or parsley

  • Salt and pepper, to taste

To Assemble:

  • Burger buns (whole wheat, brioche, or gluten-free)

  • Lettuce leaves

  • Tomato slices

  • Optional: Spicy aioli or mayo

Instructions

  1. Make the patties: In a large bowl, combine chopped salmon, egg, breadcrumbs, lemon juice, zest, herbs, and seasonings. Mix gently.

  2. Form the burgers: Divide into 3–4 equal portions and shape into patties. Chill in the fridge for 20–30 minutes.

  3. Make the avocado salsa: In a bowl, mix diced avocado, lime juice, roasted poblano, green onions, herbs, and seasonings. Chill until ready to serve.

  4. Grill or pan-sear: Preheat grill or skillet over medium-high heat. Brush with oil. Cook patties 3–4 minutes per side, flipping once, until cooked through.

  5. Assemble: Place lettuce and tomato on the bun base. Add salmon patty. Top with avocado salsa and optional aioli. Add the top bun.

  6. Serve immediately with a side salad or sweet potato fries.

Notes

You can use canned salmon in a pinch—just drain and remove skin/bones.

To keep salsa green, add lime juice right away and cover with plastic wrap.

For extra spice, add jalapeño to the salsa.

Patties can be baked at 375°F (190°C) for 12–15 minutes if preferred.
